Trim off the fins of the red snapper using kitchen shears.

Open the fish to remove the bones by cutting along the spine.

Clean out any remaining pin bones and trim the belly area.

Season the inside of the fish with olive oil, salt, pepper, and fresh herbs (rosemary, oregano, thyme) and lemon.

Fold the fish back over and tie it with butcher's twine loosely.

Preheat the grill to 450ºF - 475ºF and oil the grill grates to prevent sticking.

Place the fish on the grill and cook for 2 - 2-1/2 minutes on one side, then flip and cook for another 2 - 2-1/2 minutes.

Grill lemon halves alongside the fish for garnish.

Remove the fish from the grill and carefully cut off the butcher's twine.
