400 grams boneless chicken breasts
2 tbsps oil
Salt to taste

2 medium onions, sliced
1 tbsp chopped garlic
½ tbsp chopped ginger
1 large tomato, chopped
1½ tsps paprika powder
½ cup coconut milk
1 tsp soy sauce
2 tsps chopped palm jaggery
2-3 tbsps chopped spring onion greens + for garnish

Cut chicken into ½ inch cubes.

Heat oil in a nonstick pan. Add chicken pieces, salt, crushed black peppercorns and sauté for 2-3 minutes. Drain in a bowl and set aside.

Add onions in the same pan and sauté till translucent.

Add garlic, ginger and sauté for a minute.

Add tomato and cook till pulpy. Add paprika powder, salt, crushed black peppercorns and mix well.

Add peanut butter, coconut milk and mix well.

Add 1 cup water and mix well. Add soy sauce, palm jaggery and mix well.

Add spring onion greens and mix well.

Transfer in a serving bowl. Garnish with spring onion greens and serve hot.
