2-3 heaped tbsp Ghee (clarified butter)
16 no. Soya Chaap (soy protein sticks)
¼ cup Ghee (clarified butter)
Water as required
Boiled Soya Chaap water
Salt to taste
1 tsp Ginger Garlic paste
1 tsp Lemon juice
1 cup Hung curd (strained yogurt)
1 tsp Degi red chilli powder
¼ tsp Turmeric powder
1 tsp Ginger Garlic paste
1 tbsp Mustard oil
½ tsp Garam masala
1 large Capsicum (bell pepper), diced
1 large Tomato, diced
1 large Onion, diced
1 tbsp Oil
Marinated soya chaap
Marinated vegetables
1 tsp Lemon juice
Few Coriander leaves, roughly torn
1 tsp Ghee (for finishing)
½ tsp Degi red chilli powder
A pinch of Asafoetida
1 tsp Vinegar
3 no. Green chillies (finely chopped)
1 medium Onion (finely chopped)
⅓ cup fresh Coriander leaves (finely chopped)
1 ¼ cup Gram flour (besan)
Little water
Chaat masala (for garnish)
Nylon sev (for garnish)
Lemon wedge (for garnish)
Cheese (grated, for garnish)
A pinch of degi red chilli powder (for garnish)
Coriander sprig (for garnish)

In a handi, add ghee, once it's hot, add soya chaap and cook it for a minute.

Add ghee, water as required and mix it well.

Cover it with a lid and let it cook for 10-12 minutes until cooked well.

Transfer it to a tray and keep it aside for further use.

In a tray, add boiled soya chaap, salt to taste, ginger garlic paste, lemon juice and mix it well.

Keep it aside to marinate for a while.

In a bowl, add hung curd, degi red chili powder, turmeric powder, ginger garlic paste, mustard oil, salt to taste, garam masala and give it a good mix.

Add boiled soya chaap and mix it well.

In a bowl, add capsicum, onion, tomato, prepared tandoori marination and mix it well.

Take a grilled pan, add oil, once it's hot, add marinated soya chaap, marinated vegetables and sear it for 5-6 minutes on high flames until cooked well.

Finish it with lemon juice, few coriander leaves, ghee and mix it well.

Transfer it to a serving dish and garnish it with coriander sprig.

In a tawa or handi, add ghee, oil, once it's hot, add black peppercorns, cloves, onions and saute it for a while until translucent.

Finish it with capsicum, onion, fresh coriander leaves, dry fenugreek leaves, little water and mix it well.
