Cut the bone-in loin into thick chops, about 2 inches thick, leaving some fat on for moisture.

Season the chops with grapeseed oil as a binder.

Apply a heavy coat of everyday rub (salt, pepper, garlic blend) on all sides of the chops.

Apply a heavy coat of honey Chipotle rub (honey rub with chipotle powder) on all sides of the chops.

Let the seasoned chops rest for about 20 minutes while the grill heats up to around 225°F.

Add a chunk of hickory wood to the charcoal for flavor.

Place the chops on the grill and cook for about 20-25 minutes, checking the internal temperature aiming for 125°F.
