白菜は2cm幅に切る。にんじんは薄切りにして切り口を下にし、1cm幅に切る(短冊切り)。ねぎはみじん切りにする。

ボウルに、豚ひき肉、ねぎ、☆を入れて粘りが出るまでよく混ぜる(肉だね)。

鍋に★を入れて煮立たせ、肉だねを1/12量ずつスプーンで一口大にすくって落とし入れる。再度煮立ったらアクを取り除き、白菜、にんじんを加えてふたをして弱めの中火で6〜7分煮る。

春雨を加えてさっと混ぜ、春雨が柔らかくなるまで5分煮る。ごま油をまわしかける。
