Prepare beef short ribs for cooking.
Add 6 cups of water to a pot and bring to a boil.
Add 1 can of rinsed and drained chickpeas and 1/2 teaspoon of baking soda to the boiling water; cook for 20 minutes.
Drain the chickpeas and set aside.
In a blender, combine chopped garlic, 1/2 teaspoon of salt, juice of 1 lemon, and 1/2 cup of tahini; blend until smooth.
Add the cooked chickpeas to the blender with a tablespoon of olive oil and blend until desired consistency is reached.
Add 1 teaspoon of cumin to the hummus and blend again.
Prepare the dough for challah by mixing 1/4 cup of lukewarm water, 2 and 1/4 teaspoons of dry active yeast, and 1 teaspoon of sugar; let sit for 10 minutes until foamy.
Add 2 medium-sized eggs, 3 egg yolks, 2 tablespoons of vegetable oil, 1/3 cup of honey, and 1 and 1/4 cups of lukewarm water to the yeast mixture; mix well.
Add 2 teaspoons of kosher salt and gradually mix in 4 cups of flour until a dough forms.
Knead the dough for about 10 minutes, adding flour as needed until cohesive.
Oil a bowl and place the dough inside; let it rise for 1 hour in a warm place.
