Boil 500 grams of potatoes and mash them.

In a mixing bowl, add the mashed potatoes and flatten them.

Add 1 tablespoon red chili powder, 1 teaspoon turmeric powder, 1 tablespoon coriander powder, 1 tablespoon roasted cumin powder, 1 tablespoon garam masala, 1 teaspoon salt, and 1 tablespoon ghee to the potatoes.

Mix well and add 1/4 cup tamarind pulp and 1 tablespoon oil.

Mix on low flame until well combined and add 1/4 cup water to achieve a thinner consistency.

Cook the mixture for about 5 minutes until it reaches the right consistency.

Assemble the dabeli by placing the mixture on a plate and spreading it out.

Garnish with pomegranate seeds and peanuts.

Cut the pav into pockets without cutting all the way through.

Spread green chutney on one side and tamarind chutney on the other side of the pav.
