Wash and dry the Swiss chard leaves, removing the stems.
Prepare the filling by mixing flour, eggs, milk, and seasonings until smooth.
Chop the smoked meat and sauté with onions and garlic until fragrant.
Combine the sautéed mixture with the filling and mix well.
Place a spoonful of filling on each chard leaf and roll tightly, securing with a toothpick if needed.
Bring broth to a boil in a large pot.
Carefully place the rolled capuns into the boiling broth.
Cover and simmer for 20-25 minutes until cooked through.
Remove the capuns and let them rest briefly before serving.
Melt butter in a pan and sauté the capuns until lightly browned on all sides.
Serve hot, garnished with parsley and a sprinkle of lemon zest.
