120g / 1cup All-purpose flour
60g / 1 cup + 1tsp Rye flour

75ml / 1/3 cup Milk

45g / 1/3 cup Air dried beef /viande des Grisons
50g / 1/3 cup Onions, chopped and sweat in 20g of butter
Parsley, chopped
20g / 1 1/2 tsp Butter
240ml / 1 cup Vegetable stock
75ml / 1/3 cup Heavy cream
75g / ½ cup Cheese, Alpine Swiss cheese
45g / 1/3 cup Bacon, diced

Mix together the wet ingredients: eggs, yogurt, and milk.

Mix together the flours, salt, pepper, and nutmeg.

Combine the mixtures and add the diced bread, diced Salsiz, Landjäger, onions, and parsley. Season with salt, pepper, and nutmeg.

Rest the batter for about 30 minutes.

Blanch the chard in boiling salted water, then drain and lay them on a towel to dry.

Divide the batter between the chard leaves and roll up carefully.

Place the Capuns in a buttered baking dish.

Pour over the boiling vegetable stock and cream, season to taste, cover, and poach in the oven at 170C/335F for about 15-20 minutes.

Once cooked, pass the cooking liquid through a fine mesh sieve and reduce a little bit. If needed, season.

With a hand mixer, produce a light foam from the sauce.

Sprinkle cheese over the Capuns and place under a broil until golden brown.

In a hot pan, roast the diced bacon and strain the grease.

Divide the Capuns between 2 plates, sprinkle with bacon, chopped air dried beef, and chopped parsley. Garnish with a few spoons of the reduced sauce and foam.
