Peel and chop the raw mango into small pieces.
Dry roast mustard seeds in a pan until they start to pop.
Add fenugreek seeds and cumin seeds to the pan and roast until fragrant.
Transfer the roasted seeds to a mortar and pestle and grind to a coarse powder.
In a mixing bowl, combine the chopped mango, ground spices, and salt.
Add turmeric powder, jaggery, and vinegar to the mixture.
Finely chop green chilies and ginger, then add them to the bowl.
Mix all ingredients thoroughly until well combined.
Taste and adjust seasoning as needed, adding more salt or jaggery if desired.
Let the chutney sit for at least 30 minutes to allow flavors to meld.
Serve as a side with rice, flatbreads, or as a condiment with snacks.
