250g raspberries
2 1/2 tbsp white sugar
1/2 tsp lemon juice
3 tbsp white sugar
1 tbsp lemon zest
3 egg yolks
1/4 cup lemon juice
50g unsalted butter
Pinch of salt
1 cup heavy cream
1 1/2 tbsp white sugar
1/2 tsp vanilla

Beat egg whites for 1 minute, then gradually add sugar while still beating for 30 seconds, and continue beating for 5 minutes.
