Prepare the cabbage by cutting ½ pointed cabbage into thin strips and mixing with olive oil, red wine vinegar, 3 - 4 tablespoons of sour cream, and pepper in a mixing bowl; cover and refrigerate until serving.

After 7 hours, remove the pork from the oven when it reaches a core temperature of 93°C and let it rest for 1 hour wrapped in aluminum foil and kitchen towels.

Pour the meat juices into a saucepan and bring to a boil.
