1 medium-sized onion, finely chopped
2 green chilies, finely chopped
1/2 teaspoon cumin seeds
1/4 teaspoon asafoetida
1/4 teaspoon carom seeds
1/2 teaspoon turmeric powder
1/4 teaspoon black pepper powder
1/2 teaspoon Kashmiri chili powder
1 teaspoon pink Himalayan salt
1/2 teaspoon coriander powder
1/2 cup gram flour
1 cup sprouted jowar flour
1/2 cup fresh moringa leaves, roughly torn
2 tablespoons finely chopped coriander leaves
water (approximately 1/2 cup)

Chickpea flour is high in protein and fiber, while all-purpose flour is more economical.

Press your nails into the bottle gourd to check if it's tender; if it leaves an indentation, it's good to use.

Peel the skin of half of the tender bottle gourd and grate it into a bowl.

Add 2 cups of grated bottle gourd to the bowl.

Add 1 medium-sized finely chopped onion and 2 finely chopped green chilies to the bowl.

Add 1/2 teaspoon cumin seeds, 1/4 teaspoon asafoetida, and 1/4 teaspoon carom seeds (lightly crushed) to the bowl.

Add 1/2 teaspoon turmeric powder, 1/4 teaspoon black pepper powder, 1/2 teaspoon Kashmiri chili powder, and 1 teaspoon pink Himalayan salt to the bowl.

Add 1/2 teaspoon coriander powder, 1/2 cup gram flour, and 1 cup sprouted jowar flour to the bowl.

Add 1/2 cup of fresh moringa leaves and 2 tablespoons of finely chopped coriander leaves to the bowl.

Mix all the ingredients well, ensuring everything is coated with the flours.

Gradually add approximately 1/2 cup of water to achieve a spreadable batter consistency, mixing well.

Heat a cast iron tawa and grease it with wood-pressed ginger oil.

Once the tawa is heated, reduce the flame to low and add 2-3 tablespoons of the batter, spreading it into a thin chilla.

Drizzle a little more wood-pressed oil or ghee on top and cover to cook on low flame for about 2 to 2.5 minutes.

After 2.5 minutes, open the lid and carefully flip the chilla to cook the other side for another 2-3 minutes.

Flip it over again if needed, then transfer the chilla to a plate.

Repeat the process with the remaining batter, serving the chilla with chutney or pickle.
