Prepare your choice of grains and lentils; here I have mixed grains and mixed lentils ready to be used.

Wash 1/2 cup of mixed grains and 1/2 cup of mixed lentils several times until the water runs clear; soak for about an hour if desired.

In a pressure cooker, heat 1 tablespoon of oil on medium to high heat.

Add dry whole spices: 1 bay leaf, 1 cinnamon stick, 2-3 cloves, 2-3 cardamom pods, and 1 teaspoon mustard seeds; stir for a few seconds until fragrant.

Add 1 teaspoon cumin seeds and a pinch of asafoetida, then add 1 chopped onion; stir until the onion is slightly browned.

Add 1 teaspoon turmeric and 1 tablespoon ginger garlic green chili paste; mix well.

Add 1 chopped tomato (reserve a little for topping) and cover to cook faster until well cooked.

Add 1 cup of green peas, 1 chopped potato, and 1 cup of cauliflower; stir to combine.

Add spices: 1 teaspoon red chili powder and 1 teaspoon garam masala; mix well.

Add the soaked grains and lentils to the pot along with the soaking water; add 2 more cups of water depending on desired consistency.

Add salt to taste and optional ghee; stir to combine.

Cover the pressure cooker, put the whistle on, and cook for 2-3 whistles.

Allow the pressure cooker to cool down naturally before opening it carefully.

Serve the khichdi garnished with coconut, coriander leaves, onion, and tomato.
