Preheat oven to 350°F.

In a small bowl add the cream cheese, vanilla extract, and sugar. Mix well and set aside.

Lightly dust the work surface with flour. Unfold the sheet of puff pastry and use a rolling pin to stretch it out. Cut the sheet into 9 squares.

In a small bowl make the egg wash by beating one egg and the tbsp of water and set aside.

Line a baking sheet with parchment paper. Take one square of puff pastry and scoop 2 tsps of the cream cheese mixture in the middle. Brush a thin layer of egg wash on two sides of the square. Fold the sides over the filling and seal well.

Pierce with a fork the top of the sealed quesitos to release steam. Brush the tops and sides with egg wash and sprinkle sugar on top.

Bake at 350°F for about 15 to 25 minutes or until golden brown. Brush the top with light corn syrup or honey after removing from the oven.

Serve immediately.
