Heat 1/2 tablespoon of oil in a pan over medium heat.
Add sliced scallions and mushrooms to the pan and sauté for about 5 minutes until the mushrooms are cooked through and the onions are translucent.
Add chopped spinach to the pan and cook for about 2 minutes until wilted.
Remove the vegetables from heat and let them cool to room temperature.
In a bowl, combine the cooled vegetables with 1/2 cup room temperature cream cheese, ensuring no excess moisture is in the vegetables.
Stir in 1/2 cup lump crab meat, 1 tablespoon lemon juice, and 1/2 teaspoon celery salt until well combined.
Lay out the salmon fillets on a parchment or aluminum foil-lined sheet.
Make a slit down the center of each salmon fillet without cutting all the way through the skin.
Season the outside of each salmon fillet with salt and pepper before stuffing.
Stuff the filling into the slits of the salmon fillets, dividing the mixture equally between the two fillets.
Spread any remaining crab meat filling on top of the salmon fillets.
Place the stuffed salmon fillets in a 350°F (175°C) oven for about 18 to 20 minutes, or until the crab meat stuffing turns light golden brown.
