Get your slow cooker on to high and cook for about 6 hours or low for about 8 hours.

In a bowl, mix plain flour, salt, and smoked paprika.

Coat the beef in the seasoned flour in small batches, shaking off excess flour into a different bowl.

Heat olive oil in a medium to high heat pan and sear the beef in small batches until browned, then transfer to a bowl.

Add carrots to the bottom of the slow cooker, followed by potatoes, then place the seared beef on top.

Pour in one pint of chicken stock and the Guinness over the beef and vegetables.

Add garlic, a bit more oil, and tomato purie to the onions, stir, and add the remaining pint of chicken stock to bring to a simmer.

Pour the onion mixture into the slow cooker, add bay leaves, and cover with the lid.
