Beer Braised Pork Chops

Non-alcoholic beer maintains some flavor without alcohol.

Chicken breasts are leaner, while pork shoulder is more economical.
Make the brine by adding water, cane sugar, salt, and thyme to a pot; heat until dissolved.
Cool the brine down with ice cubes.
Brine the pork chops for 2 to 12 hours.
Remove pork chops from brine and pat dry; season with salt and pepper.
Coat pork chops in flour and shake off excess.
Heat a pan and add butter and cooking oil.
Sear pork chops for 2 to 3 minutes on each side until browned; do not overcrowd the pan.
Remove pork chops from the pan and add more butter and sliced onions; cook until softened.
Add dark beer to de-glaze the pan, scraping up brown bits, and season with salt and pepper.
Add more beer to the pan and return pork chops; cover with a lid or aluminum foil.
Simmer for 12 to 15 minutes.
Remove pork chops and thicken the sauce with a slurry of starch and water; add mustard if possible.
Plate mashed potatoes and pork chops, then add gravy on top.
