1 cup pigeon peas
2 cups brown rice
1 cup grated carrot
1/2 cup chopped celery
1 cup sliced mushrooms
1 medium onion
1 can (13.5 oz) coconut milk
1/4 cup chopped scallion
1 tablespoon dried thyme
1 teaspoon garlic powder
1 teaspoon grated ginger
1 medium bell pepper
1/4 cup chopped parsley
1 teaspoon salt
1 tablespoon browning sauce
1 vegetable bouillon cube
3 cups water
1 whole scotch bonnet pepper (optional)

Add onions to oil in a pot (or use water for oil-free) and sauté.

Add carrot, celery, and mushroom to the pot and sauté for a couple of minutes.

Add about 1 tablespoon of browning sauce and mix it with the veggies.

Add bell pepper and pigeon peas to the pot and sauté for a little longer.

Cook the veggies and peas on medium-high heat for a couple of minutes.

Add grated ginger, salt, and garlic powder to the pot and mix well.

Add thyme, scallion, and scotch bonnet pepper (or preferred pepper) to the mixture.

Pour in coconut milk and add veggie bouillon to the pot.

Add washed and soaked brown rice to the pot.

Add remaining water and parsley to the pot.

Bring the mixture to a boil for a couple of minutes before covering the pot.

Cover the pot with foil (or a lid if available) and turn the heat to very low.

Simmer for about 30 minutes, checking periodically to ensure the rice doesn't dry out or burn.
