1 teaspoon ginger

Place 4 cups of freshly grated coconut in a pot over medium heat.

Add 1 tablespoon of lime zest, 10 spearmint leaves, and 1 medium bay leaf (crushed) to the pot.

Add 1 teaspoon of nutmeg, 1 teaspoon of ginger, and 1 teaspoon of cinnamon to the mixture.

Pour in 1.5 cups of light brown sugar and 4 cups of water.

Mix all the ingredients to ensure they are well combined.

Cover the pot and let it cook for about 30 minutes.

While the coconut is boiling, prepare a plantain leaf for shaping the tablets.

After 30 minutes, uncover the pot and check the mixture; it should be nearing a brown color and the water should be mostly evaporated.

Continue boiling uncovered until the water is fully dried up.

Turn off the heat and scoop spoonfuls of the mixture onto the prepared plantain leaf, shaping them as desired.
