Tuscan Chicken

6 skinless boneless chicken thighs

Season the chicken thighs with plenty of paprika and any other seasonings to taste.

Heat a frying pan and add plenty of coconut oil.

Cook the chicken thighs in the frying pan for 3 to 5 minutes on each side until golden and cooked through.

Remove the chicken thighs from the pan and set them on a plate.

Add chopped red onion and garlic to the frying pan with the chicken juices, and sauté until softened and golden.

Chop sun-dried tomatoes and add them to the pan once the onion is softened.

Add a few handfuls of spinach to the pan and let it wilt down, tossing everything together.

Pour in 1/2 cup of cream, 1/2 cup of stock or water, and 1/2 cup of Parmesan cheese, and let it simmer to develop flavors.

Add the chicken thighs back into the pan and cook until completely heated through, flipping every few minutes for 5 to 10 minutes until done to liking.

Serve the creamy Tuscan chicken with your choice of cauliflower rice, zucchini noodles, rice, or pasta.
