Season 1 pound of chicken tenderloin with olive oil, onion powder, garlic powder, paprika, chili powder, Italian seasoning, and salt, rubbing the seasoning in well on both sides.

Peel 4 red potatoes and cut them into small squares to cook quickly.

Soak the cut potatoes in water to remove starch, washing them 3 to 4 times.

Boil the potatoes in salted water until they are nice and soft.

Drain the boiled potatoes and place them in a strainer.

Mash the potatoes using a strainer for a creamy texture, adding 1/4 cup of heavy whipping cream gradually and 2 tablespoons of butter while mixing until smooth.

Season the mashed potatoes with salt and garlic powder, mixing well and tasting to adjust seasoning.

Heat a pan over medium-high heat and add oil from sun-dried tomatoes to sear the chicken for 2-3 minutes on each side until cooked through and nicely seared.

Remove the chicken from the pan and set aside.

In the same pan, add 3 oz of chopped sun-dried tomatoes and 1/4 small onion, stirring until the onion is translucent.

Add 1/2 tablespoon of minced garlic and 1 1/2 cups of heavy whipping cream to the pan, stirring well.

Add a handful of spinach to the sauce and season with the remaining seasoning used for the chicken.

Return the chicken to the pan, mixing it with the sauce, and add freshly grated Parmesan cheese.
