Tuscan Chicken

4 boneless skinless chicken breasts
2 tsp Freshly ground black pepper, divided
2 tsp salt, divided
1 tsp Garlic powder
1 tbsp Extra virgin Olive oil
1 white onion, chopped
3 cloves garlic, minced
1/2 cup sundried tomatoes
2 cups baby spinach
1/2 cup heavy cream
1 tsp dried Italian herbs
1/4 cup freshly grated Parmesan

In a skillet over medium heat, heat oil. Add chicken and season with 1 tsp pepper, 1 tsp salt and Garlic powder. Cook until golden and no longer pink, 8 minutes per side. Remove from the skillet and set aside.

In the same skillet over medium heat, add olive oil (if required). Stir in onion and garlic, cook until fragrant, about 1 minute. Add sun dried tomatoes, mix it and then add spinach and cook until spinach is beginning to wilt. Stir in heavy cream and season with dried herbs, 1 tsp black pepper and 1 tsp salt and bring it to a simmer.

Reduce heat to low and simmer until sauce is slightly reduced, about 3 minutes. Return chicken to skillet and cook until heated through, 5 to 7 minutes. Now add freshly grated Parmesan cheese. Turn off the heat.
