Black Bean Burger

1 can (15 oz) black beans, drained and rinsed
1/2 cup breadcrumbs
1/4 cup finely chopped onion
1/4 cup finely chopped bell pepper
2 cloves garlic, minced
1 tsp cumin
1/2 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
1 egg (or flax egg for vegan option)
2 tbsp olive oil (for cooking)

In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

Add the breadcrumbs, chopped onion, bell pepper, garlic, cumin, chili powder, salt, and black pepper to the mashed beans. Mix until well combined.

If using, prepare the flax egg by mixing 1 tbsp ground flaxseed with 2.5 tbsp water and let it sit for 5 minutes to thicken.

Add the egg (or flax egg) to the mixture and stir until fully incorporated.

Form the mixture into 4 equal-sized patties.

Heat olive oil in a skillet over medium heat. Once hot, add the patties to the skillet.

Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.

Remove from the skillet and let them rest for a few minutes before serving.
