Preheat the oven to 200 degrees Celsius (fan) for the mushrooms.
Chop the red onion and garlic roughly and place them in a frying pan with olive oil and salt.
Saute the onion and garlic for 5 to 10 minutes until they are soft and slightly golden brown.
Prepare the mushrooms by placing 150 grams of chestnut mushrooms on a baking tray, drizzling with olive oil, and adding a crack of black pepper.
Bake the mushrooms in the oven for 10 to 15 minutes until they are dark golden brown.
While the mushrooms are baking, cook the quinoa by adding it to a pan with boiling water and a little salt, cooking for about 10 to 15 minutes.
When the onion and garlic are caramelized, add smoked paprika, chili powder, and cayenne pepper to the pan and cook for another minute.
Let the onion, garlic, quinoa, and mushrooms cool before mixing them together in a food processor.
Add a drained and rinsed can of black beans, a generous tablespoon of plain flour, a teaspoon of arrowroot, and salt and pepper to the food processor with the cooled mixture.
Mix everything together in the food processor until combined.
Refrigerate the mixture for about 30 minutes to cool and firm up.
Mold the mixture into patties and refrigerate again for another 30 minutes before frying.
