Black Bean Burger

1/4 Green Pepper
1/4 Onion
3-4 Mushrooms
1/4-1/2 cup Bread Crumbs
3 Tbs Black Beans (canned-unrinsed)
1 Tbs Olive oil (or oil of your choice) for cooking the burgers

Rough chop green peppers, onion and mushrooms. Add them to the blender.

Next, add black beans (including about a tsp of the juice from the beans for added flavor). Add 1/4 cup bread crumbs (save the rest for later just in case the mixture is too thin).

Blend until all ingredients are well incorporated and mixture mimics the texture of 'ground beef', adding additional breadcrumbs one tsp at a time to thicken if necessary.

Once the mixture has formed into a 'ground beef' consistency, form into burger patties (this recipe makes two large patties or 3-4 small burgers).

Add oil to your pan and preheat on medium-high heat. Add your black bean burger patties and season them. Cook burgers for 5-7 minutes, then flip and cook for an additional 3-5 minutes or until the middle is firm to touch.
