Instructions

  1. 1Rinse and drain black beans, then mash in a bowl until mostly smooth.
  2. 2Finely chop onion, garlic, bell pepper, and jalapeño.
  3. 3Heat olive oil in a skillet over medium heat, add onion, garlic, and bell pepper; sauté until softened, about 5 minutes.
  4. 4Add jalapeño, cumin, coriander, and paprika; cook for 2 minutes until fragrant.
  5. 5Combine sautéed vegetables with mashed black beans in the bowl; mix well.
  6. 6Stir in bread crumbs, egg, salt, and black pepper until fully incorporated.
  7. 7Form mixture into patties, about 1/2 inch thick.
  8. 8Chill patties in the refrigerator for at least 30 minutes to firm up.

Ingredients

  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen
  • 1 medium poblano pepper, diced
  • 1/2 cup red onion, diced
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
  • 2 tbsp olive oil
  • Fresh cilantro, for garnish (optional)

Instructions

  1. 1In a skillet, heat 1 tablespoon of olive oil over medium heat.
  2. 2Add the diced poblano pepper and red onion to the skillet. Sauté for about 5 minutes until softened.
  3. 3Stir in the black beans, corn, cumin, chili powder, salt, and black pepper. Cook for another 3-4 minutes until heated through.
  4. 4Remove the mixture from the heat and stir in half of the shredded cheese.
  5. 5In the same skillet, add another tablespoon of olive oil and heat over medium heat.
  6. 6Place one tortilla in the skillet and spread half of the black bean mixture on one half of the tortilla. Sprinkle with some of the remaining cheese.
  7. 7Fold the tortilla over to cover the filling and cook for about 3-4 minutes until golden brown. Flip and cook the other side for another 3-4 minutes until the cheese is melted.
  8. 8Remove the quesadilla from the skillet and repeat with the remaining tortillas and filling.
  9. 9Cut the quesadillas into wedges and garnish with fresh cilantro if desired.
  10. 10Serve warm with salsa or guacamole.
