Instructions
- 1Rinse and drain black beans, then mash in a bowl until mostly smooth.
- 2Finely chop onion, garlic, bell pepper, and jalapeño.
- 3Heat olive oil in a skillet over medium heat, add onion, garlic, and bell pepper; sauté until softened, about 5 minutes.
- 4Add jalapeño, cumin, coriander, and paprika; cook for 2 minutes until fragrant.
- 5Combine sautéed vegetables with mashed black beans in the bowl; mix well.
- 6Stir in bread crumbs, egg, salt, and black pepper until fully incorporated.
- 7Form mixture into patties, about 1/2 inch thick.
- 8Chill patties in the refrigerator for at least 30 minutes to firm up.
- 9Preheat grill or skillet over medium heat.
- 10Cook patties for 4-5 minutes on each side until golden brown.
- 11Assemble burgers with avocado, lettuce, and tomato on buns.
- 12Serve immediately with your favorite condiments.

- ●1 medium poblano pepper, diced
- ●1/2 cup red onion, diced
- ●1 tsp cumin
- ●1/2 tsp chili powder
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1 cup shredded cheese (cheddar or Monterey Jack)
- ●4 large flour tortillas
- ●2 tbsp olive oil
- ●Fresh cilantro, for garnish (optional)
Instructions
- 1In a skillet, heat 1 tablespoon of olive oil over medium heat.
- 2Add the diced poblano pepper and red onion to the skillet. Sauté for about 5 minutes until softened.
- 3Stir in the black beans, corn, cumin, chili powder, salt, and black pepper. Cook for another 3-4 minutes until heated through.
- 4Remove the mixture from the heat and stir in half of the shredded cheese.
- 5In the same skillet, add another tablespoon of olive oil and heat over medium heat.
- 6Place one tortilla in the skillet and spread half of the black bean mixture on one half of the tortilla. Sprinkle with some of the remaining cheese.
- 7Fold the tortilla over to cover the filling and cook for about 3-4 minutes until golden brown. Flip and cook the other side for another 3-4 minutes until the cheese is melted.
- 8Remove the quesadilla from the skillet and repeat with the remaining tortillas and filling.
- 9Cut the quesadillas into wedges and garnish with fresh cilantro if desired.
- 10Serve warm with salsa or guacamole.
