Mediterranean Spiced Salmon

1 cup quinoa
½ teaspoon kosher salt
¾ cup english cucumbers
1 cup cherry tomatoes
¼ cup red onion
4 basil leaves
zest of one lemon
½ teaspoon kosher salt
¼ teaspoon black pepper
1 teaspoon cumin
½ teaspoon paprika
20 ounces salmon fillets
8 lemon wedges
¼ cup parsley

Preheat the oven to 400°F (200°C).

In a small bowl, mix together the paprika, cumin, oregano, garlic powder, onion powder, salt, and black pepper.

Place the salmon fillets on a baking sheet lined with parchment paper.

Drizzle olive oil over the salmon fillets and rub the spice mixture evenly on top of each fillet.

Arrange lemon slices on top of the salmon for added flavor.

Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Remove from the oven and let it rest for a few minutes.

Garnish with fresh parsley before serving.
