2 filet mignon steaks (4 to 6 oz each)

1/4 cup balsamic vinegar
1/4 cup dry red wine

Sprinkle fresh ground black pepper to taste evenly on both sides of the filet mignon steaks.

Salt the steaks to taste, seasoning both sides.

Heat a skillet over medium-high heat.

Add 1 tablespoon of oil to the hot skillet.

Place the filet mignon steaks in the skillet and cook for 1 minute until browned.

Flip the steaks after 1 minute.

Reduce the heat to medium-low.

Add 1/4 cup of balsamic vinegar and 1/4 cup of dry red wine to the skillet.

Cover the pan and cook the steaks for 4 minutes.

Flip the fillets and baste them with the wine sauce.

Cover and cook for another 4 minutes.
