Select two 2-inch thick filet mignon steaks with good marbling.

Clean the grill grate until it looks clean.

Season the steaks with kosher salt and freshly ground black pepper on all sides.

Set up the grill for two-stage cooking: keep the valve on the right closed and the valve on the left open for airflow.

Cook the steaks low and slow, aiming to pull them off at 115 degrees Fahrenheit, rotating them halfway through the cooking process.

After about 7-8 minutes, check the temperature of the steaks; they should be around 115-116 degrees Fahrenheit.

Baste the steaks in butter after rotating them and again before searing them off.

Flip the steaks every 30 to 45 seconds while basting them in butter to create a crust.

Once the steaks reach 126-127 degrees Fahrenheit, pull them off the heat and let them rest for about 10 minutes, wrapped in aluminum foil with pats of butter.

After resting, check the steaks for doneness; they should be medium rare with a warm pink center.
