- ●2 filet mignon steaks (6-8 oz each)
- ●2 tbsp olive oil
- ●1 tsp salt
- ●1/2 tsp black pepper
- ●2 cloves garlic, minced
- ●2 sprigs fresh rosemary (or 1 tsp dried)
- ●2 tbsp butter
Instructions
- 1Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking.
- 2Preheat your oven to 400°F (200°C).
- 3Season both sides of the steaks with salt and black pepper.
- 4In a large oven-safe skillet, heat the olive oil over medium-high heat until shimmering.
- 5Add the steaks to the skillet and sear for about 3-4 minutes on each side until a golden-brown crust forms.
- 6Add the minced garlic and rosemary to the skillet, then add the butter and baste the steaks with the melted butter for about 1 minute.
- 7Transfer the skillet to the preheated oven and roast the steaks for about 5-7 minutes for medium-rare, or until they reach your desired doneness.
- 8Remove the skillet from the oven and let the steaks rest for 5 minutes before serving.
- 9Slice and serve the filet mignon with the pan juices drizzled over the top.

- 4Place skirt steak on the grill and cook for 4-5 minutes per side for medium-rare.
- 5Use tongs to flip the steak halfway through cooking.
- 6Remove steak from grill and let rest for 5 minutes before slicing.
- 7Slice steak against the grain into thin strips.
- 8Serve with chopped fresh cilantro, diced onion, bell pepper, avocado, and tomato.
- 9Garnish with lime wedges.
