Make a sponge with dried instant yeast, sugar, and a couple of spoons of flour, then add warm water and mix until spongy.
Cover the sponge with cling film and let it sit until bubbly.
Mix the remaining sugar with flour and salt in a bowl.
Add the spongy mixture to the dry ingredients and gradually add water until a rough dough forms.
Knead the dough on a floured cutting board until it comes together, then incorporate a lump of butter by folding the edges over it.
Continue kneading until the dough is relatively smooth, then place it in a floured bowl and cover with cling film to rest until doubled in size, about an hour.
Weigh the dough (808 grams) and cut it into four equal sections (202 grams each).
Roll each section into a disc and then into log shapes, fitting them into a greased 9 x 13 baking sheet.
Cover the shaped dough with cling film and let it rise for another hour.
Preheat the oven to 200 degrees Celsius (392 Fahrenheit) and bake the bread for 15-20 minutes until golden.
Rub the baked bread with butter after removing it from the oven.
In a frying pan, cook thinly sliced sirloin steak for 1-2 minutes on one side, then add ham and Munster cheese, covering with water to melt the cheese.
Spread mayonnaise on both sides of the bread.
Layer shredded lettuce and tomato slices on the bread, seasoning with salt and pepper.
Add the cooked meat and cheese mixture on top of the vegetables.
Top the sandwich with an over-easy egg (optional).
Drizzle chimichurri over the sandwich before serving.
