Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add diced onions and salt, stirring well.
Reduce heat to medium/low and cook for 15-20 minutes, stirring occasionally, until lightly browned.
Turn heat back up to medium-high, add 1 tablespoon of water, stir, and cook for 2-3 minutes until water evaporates.
Repeat the water addition two more times and store onions until ready to use.
Combine all special sauce ingredients in a bowl and whisk until well combined; cover and refrigerate.
Heat a skillet on medium-high heat, add about 1 teaspoon of butter per bun, and toast the inside for about 1 minute until edges are dark brown.
Cut beef into 8 pieces, roll into balls, and flatten into thin patties using wax paper.
Season patties with salt and pepper, stack them on a plate, and lightly oil a large skillet.
Heat the skillet on medium-high, place 2 patties seasoned side down, season the top with salt, pepper, and 1 tablespoon of mustard, and cook for 2-3 minutes until browned.
Flip and cook for 1 minute, then add sliced cheese on both patties and stack with caramelized onions before removing from the pan.
Assemble the burgers in the following order: bottom bun, 1 heaping tablespoon of sauce, 4 pickle slices, 1 tomato slice, 2 torn lettuce leaves, double meat double cheese onion stack, and top bun.
