Matoke, also known as steamed green bananas, is a staple dish in Uganda, often served with meat or sauce. Traditionally prepared for family gatherings and celebrations, it embodies the communal spirit of Ugandan dining. Add 500 g of beef into the pressure cooker.

Pour in 1 cup of water, along with crushed garlic and ginger for flavor.

Cover and secure the lid of the pressure cooker, then boil for around three whistles.

Manually release the pressure after three whistles and open the lid to check the beef, which should be tender.

Set the cooked beef aside and pick another pot for making the beef matoke.

Over high flames, add 3 tbsp of cooking oil to the pot.

Add chopped onions to the oil and cook until golden brown.

Once the onions are browned, add in chopped carrots and tomatoes, stirring them in.

Add spices: beef Masala, peri peri seasoning, cumin seeds, and 2 beef seasoning cubes; stir to combine.

Add tomato paste and a splash of water to help the tomatoes cook, then cover and cook for around 2 minutes over medium-low flame.

After 2 minutes, add back the cooked beef along with the beef broth from the pressure cooker; stir and cook for around 2 minutes to soak in the flavors.

Add drained green bananas to the pot, then pour in around 4 cups of water.

Cover and simmer on low for around 5 to 10 minutes or until the green bananas are ready.

After 5 minutes, check on the pot and stir; adjust seasoning with salt if necessary.

After 10 minutes, check the consistency; the green bananas should be starting to break apart, indicating they are ready.

Stir the mixture again to prevent the bananas from sticking to the bottom of the pot.

Add chopped green capsicum and coriander, stirring to combine.

Check the final dish; the beef should be tender and the green bananas soft and flavorful.
