Traditionally served as a meze, these fritters embody the essence of Greek cuisine—fresh, vibrant ingredients transformed into something delightful. Today, they are enjoyed across Greece and beyond, often paired with tzatziki or a fresh salad, making them a popular choice for gatherings and casual meals.

Vegetable oil is often less expensive and has a neutral flavor.
Grate one large ripe tomato using a cheese grater.
Grate one small onion using the cheese grater.
Grate two zucchinis using the cheese grater.
Chop the second large tomato into small pieces.
Chop fresh mint, parsley, and a little bit of basil.
Add chopped herbs to the bowl with grated vegetables.
Add oregano, baking powder, and flour to the mixture.
Crumble in feta cheese and season with salt and pepper, adjusting salt based on feta's saltiness.
Add a splash of extra virgin olive oil for flavor.
Mix all ingredients together until combined.
If time allows, refrigerate the mixture for 2-3 hours for better flavor; otherwise, proceed to fry immediately.
Heat oil in a frying pan to about 170 degrees Celsius.
Shape the mixture into canel (small shapes) using two spoons or form small patties.
Carefully drop the fritters into the hot oil and fry until golden brown, about 3-4 minutes per side.
Remove fritters and drain on paper towels to absorb excess oil.
Serve warm with a generous portion of yogurt in the center and sprinkle with paprika.
