Stir in ground beef and cook until browned, about 8-10 minutes.
Mix in curry powder, salt, black pepper, and lime juice; cook for another 2 minutes.
Remove from heat and fold in cilantro, carrots, and peas; let cool.
Combine the beef mixture with mashed potatoes until well mixed.
Shape the mixture into patties, about the size of your palm.
Dip each patty in beaten egg, then coat with bread crumbs.
Heat oil in a frying pan over medium heat until shimmering.
Fry patties in batches until golden brown on both sides, about 3-4 minutes per side.
Remove from oil and drain on paper towels.
Serve hot with lime wedges and dipping sauce.
