1 teaspoon salt
1/2 cup chopped cucumbers

1/4 cup chopped spring onions
1/2 cup boiled black chana
1/3 cup boiled peanuts
1/4 cup chopped cilantro
1/2 teaspoon cumin powder
1/2 teaspoon pink himalayan salt
1/4 teaspoon black pepper powder
2 teaspoons lime juice
sliced avocado

Add the washed quinoa to a pot with 2 cups of water and 1 teaspoon of salt.

Once boiling, cover with a lid and cook for 12 to 15 minutes.

After around 15 minutes, uncover the lid and check that all the water is absorbed and quinoa is fluffy.

Add 2 cups of cooked quinoa to a large mixing bowl.

Add 1/2 cup of chopped cucumbers, 1/2 cup of grated carrots, 1/4 cup of chopped tomatoes, 1/4 cup of chopped spring onions, and 1/2 cup of boiled black chana.

Alternatively, you could use chole or moong beans.

Next, add 1/3 cup of boiled peanuts, 1/4 cup of chopped cilantro, 1/2 teaspoon of cumin powder, 1/2 teaspoon of pink himalayan salt, and 1/4 teaspoon of black pepper powder.

Add 2 teaspoons of lime juice and combine everything together.

Top with sliced avocado and sprinkle some salt and pepper on the avocado slices.
