Boil potatoes until really soft.
Cut onions into super small pieces using a thin-bladed knife.
Blend mint, green chilies, ginger, and salt with some water until smooth.
Push mashed potatoes through a sieve for a flaky texture.
Mix in red chili powder, cumin powder, turmeric, amchur, chaat masala, and salt into the mashed potatoes.
Add chopped onions and green chilies to the potato mixture and mix well.
Roll the potato mixture into patties and dip them in a batter made of milk, wheat flour, and salt.
Fry the patties in hot oil until golden brown and drain on tissue to remove excess oil.
Plate two patties in a bowl and add green chutney, tamarind, coriander leaves, and chopped onions on top.
Crush khakra and sprinkle it over the patties for added crunch.
Add sev or any dry Indian snacks on top as garnish.
Squeeze lemon juice and optionally add ketchup before serving.
