Tomato Bisque

2 pounds fresh tomatoes
shallots

extra virgin olive oil
balsamic vinegar

2 tablespoons tomato paste
veggie stock or water
veggie cube
potato
parm rind
cream

Preheat the oven to 450°F.

Take a couple of pounds of fresh tomatoes, shallots, garlic, fresh thyme, fresh oregano, extra virgin olive oil, balsamic vinegar, and salt.

Toss all the ingredients together.

Spread the mixture on a baking sheet and roast in the oven for about 45 minutes until deeply colored and the tomato flavor is intensified.

Add a potato to the roasted mixture for a velvety texture.

Stir in 2 tablespoons of tomato paste along with veggie stock or water and a veggie cube.

Bring the mixture to a simmer and add the rind of some parmesan cheese.

Simmer everything together until the potatoes are tender.

Use an immersion blender to blend the soup until smooth.

Add a little bit of cream and simmer for an additional 5 minutes.

Adjust seasoning to taste and garnish with fresh basil and parmesan.
