Soak 1 cup of whole grain basmati rice in water for about 30 minutes.
Wash the rice a few times before soaking.
In a pressure cooker, add 1 tablespoon of ghee and 1 tablespoon of oil.
Add whole spices: cinnamon, cloves, cardamom, star anise, and 1 bay leaf to the cooker.
Slice 2 medium sized onions thinly and add them to the cooker; sauté until transparent.
Add 2 large green chilies cut into pieces.
Add 1 teaspoon of ginger-garlic paste and mix well.
Add 4 medium sized chopped tomatoes to the mixture.
Stir in 1/4 teaspoon of turmeric powder, 1 teaspoon of salt, and 3 teaspoons of red chili powder; mix thoroughly.
Add 1 teaspoon of garam masala powder and mix again.
Add the soaked rice to the cooker and mix gently.
Add a handful of coriander leaves.
Pour in 1.5 cups of water and mix gently.
Pressure cook for one whistle on medium flame.
