Heat a pan and add 1 tbsp of oil.

Add whole garam masala, cinnamon stick, cloves, black peppercorns, black cardamom, green cardamom, javiatri, and 1 tsp of cumin seeds; let everything crackle for under a minute.

Add 2 finely chopped onions, 1/2 inch of ginger, and 4-5 garlic cloves; sauté until the onions turn translucent.

Add 1/2 cup of coconut powder and keep sautéing on low to medium heat until the onions and coconut turn a nice red color.

Transfer this mixture to a mixer grinder jar; add 2 roughly chopped tomatoes and grind into a smooth paste without adding extra water.

Heat a pot or kaddai on medium heat and add another tablespoon of oil.

Pour in the ground masala paste and sauté for just under a minute.

Add turmeric powder, red chili powder, garam masala, and salt to taste; mix everything well.

Add soaked choli and 2-3 roughly chopped potatoes with skin on; pour in some hot water and stir well.

Add a little bit of jaggery to enhance flavor; adjust consistency with more hot water if needed.

Bring to a nice boil, close the lid, and let it cook for 20-25 minutes until the choli is perfectly cooked.

Garnish with fresh chopped cilantro and serve hot with roti, puri, or rice.
