Heat a large stove top pan over medium heat and add 1 tablespoon of oil.

Add 2 lbs of 93/7 ground beef and break it up as it cooks.

Once the beef is browned (about 5-10 minutes), add in 1/2 chopped onion and 4 teaspoons of minced garlic (optional) and continue cooking until the meat is brown.

Transfer the browned meat mixture to the bottom of the slow cooker.

Add 1 large can of diced tomatoes, 8 oz of beef bone broth, 8 oz of salsa, 1 small can of diced green chilies, 1 can of drained and rinsed dark red kidney beans, 1 can of drained and rinsed black beans, 1 can of Southwest corn, 1 packet of low sodium taco seasoning, and 1 and 1/2 tablespoons of ranch dressing mix to the slow cooker.

Mix all the ingredients together thoroughly in the slow cooker.

Cover and cook on low for 7-8 hours or high for 3-4 hours.
