Prepare the dough by mixing 1 kg of farina di farro with 600 g of cold water, 12 g of fresh yeast, 20 g of salt, and 80 g of olive oil.

Knead the dough until smooth and let it rest briefly as it does not require long fermentation.

Roll out the dough using semolina flour.

Place half of the dough in a greased baking tray.

Layer 250 g of prosciutto cotto and 250 g of scamorza on top of the dough.

Cover with the remaining dough and seal the edges.

Brush the top with olive oil before baking.
