Soak gelatin in cold water until softened, about 5 minutes.
Heat milk in a saucepan over medium heat until warm, but not boiling.
Whisk egg yolks and sugar in a bowl until pale and creamy.
Gradually add warm milk to egg mixture, whisking constantly to temper the eggs.
Return the mixture to the saucepan and cook over low heat until thickened, about 5-7 minutes.
Remove from heat and stir in soaked gelatin until fully dissolved.
Add vanilla extract and salt, mixing well.
Let the mixture cool to room temperature, stirring occasionally.
In a separate bowl, whip heavy cream until soft peaks form.
Fold whipped cream into the cooled mixture gently until combined.
Pour into serving dishes and refrigerate until set, at least 4 hours.
Serve chilled, optionally topped with additional whipped cream.
