Cut the end off the garlic and squeeze to peel off the skin.

Thinly slice 5 cloves of garlic and transfer to a bowl.

Chop the end off the red chili pepper, roll it in your hand to release the seeds, and then roughly chop it, transferring it to the bowl.

Take the squid tubes, which are already cleaned, and wash them out.

Pat the squid dry with paper towels.

Make diagonal shallow cuts across the squid on both sides.

Baste the squid with olive oil, sea salt, and black pepper on both sides.

Preheat the grill or kewee pan to medium heat.

Cook the squid steaks in the pan for around 1.5 minutes on each side, totaling 3 minutes.

Remove the squid from the pan and set aside.

In the same pan, add 2 tablespoons of extra virgin Spanish olive oil, sliced garlic, and chopped chili pepper, mixing them around.

After a minute, add 3 tablespoons of white wine, a squeeze of lemon juice, 1 tablespoon of freshly chopped parsley or 1 teaspoon of dried parsley, and some sea salt and black pepper. Mix quickly and leave for 2 minutes.

After 2 minutes, turn off the heat and transfer the sauce on top of the squid steaks.
