Make a slit around the stem of the eggplant and remove the calyx.

Grill the eggplant directly on the flame of a gas stove or use a portable gas stove for 4 to 5 minutes, rotating to cook evenly.

Cool the eggplant for a couple of minutes to be able to handle it and peel the charred skin off.

Wash lightly to remove any specks of skin and pat dry with paper towels.

Cut the eggplant into three pieces lengthwise and then cut into smaller pieces if desired.

Plate the eggplant and top with bonito flakes, grated ginger, and soy sauce.

Serve immediately or chill in the fridge before serving.
