Grilled Eggplant with Garlic Sauce

Slice the eggplant into 1/2-inch thick rounds.
Sprinkle salt on both sides of the eggplant slices and let sit for 30 minutes to draw out moisture.
Rinse the eggplant slices under cold water and pat dry with paper towels.
Preheat the grill to medium-high heat.
Brush both sides of the eggplant slices with olive oil.
Place the eggplant slices on the grill and cook for 4-5 minutes per side until grill marks appear and the eggplant is tender.
While the eggplant is grilling, prepare the garlic sauce by mincing the garlic.
In a small bowl, combine minced garlic, lemon juice, and a pinch of salt and black pepper.
Once the eggplant is grilled, remove it from the grill and place it on a serving platter.
Drizzle the garlic sauce over the grilled eggplant slices.
Garnish with chopped parsley and red pepper flakes if desired.
Serve warm or at room temperature.
