Grilled Eggplant with Garlic Sauce

Preheat the grill using coals for high heat.
Peel 4 to 5 cloves of garlic.
Finely mince the garlic using a knife to create a paste.
Add a pinch of kosher salt to the garlic to help break it down into a paste.
Use the side of the knife to smash and spread the garlic until a paste-like consistency is reached.
Set the garlic paste aside and combine it in a small mixing bowl with rice vinegar, soy sauce, crushed red pepper, and sesame oil.
Whisk the mixture together and set aside.
Cut the eggplant into round slices about 1 inch thick.
Drizzle the eggplant slices with extra virgin olive oil on each side.
Dust the eggplant slices with salt and black pepper.
Place the eggplant slices on the grill and cook for about 3 minutes on each side until golden brown.
Remove the eggplant from the grill and let cool for a minute.
Garnish the grilled eggplant with mint from the garden.
Plate the eggplant and top with the garlic sauce.
