Cut the fish in two identical halves from the belly up, leaving the back intact.

Generously brush the inside of the fish with a marinade made of olive oil, rock salt, tamarind, and ground turmeric.

Lock the fish in a standing position and grill for 3-4 hours, or until cooked through.

Alternatively, place the fish in a locking position in an open wood pit and smoke/grill for about 45 minutes to an hour, with the open side facing the fire.
