Marble Cake has roots in various cultures, often enjoyed as a celebratory dessert. In Kenya, it is a popular treat for special occasions and gatherings, showcasing the blend of flavors from vanilla and chocolate. This delightful cake has found its way into homes around the world, with variations that reflect local tastes and ingredients.
Measure 1.25 cups of all-purpose flour and set aside.
Measure 3/4 cup of vegetable oil and add to the mixing bowl.
Add 1/4 cup of milk to the mixing bowl.
Add 1 teaspoon of vanilla essence to the mixing bowl.
Add 1 tablespoon of baking powder to the mixing bowl.
Add 3/4 cup of sugar to the mixing bowl and beat until fluffy.
Add 4 eggs to the mixture and beat at high speed until fluffy.
Add the oil and milk mixture to the egg mixture and beat for 1-2 minutes at low speed.
Gradually add the flour to the mixture, sifting it in half at a time.
Mix until well combined, scraping the sides of the bowl with a spatula.
Divide the batter into two equal portions in separate bowls.
Add 1 tablespoon of cocoa powder to one portion and mix well.
Preheat the oven to 180 degrees Celsius.
Grease the baking pans with vegetable oil and dust with flour.
Pour the vanilla batter into the greased loaf tin and scoop the chocolate batter using an ice cream scooper.
Repeat the process until all batter is used, filling the cupcake tin with remaining batter.
Bake in the oven for 35-40 minutes, checking the cupcakes after 15 minutes.
Remove cupcakes when a skewer comes out clean, and leave the loaf cake in for an additional 15 minutes if needed.
